Sometimes to make one gorgeous restaurant, you need a trifecta of talent. Case in point: Swan. The new Miami Design District hot spot brings together the talents of David Grutman (the hospitality guru behind LIV, Planta, OTL, and more), Jean Imbert (Top Chef winner), and Pharrell Williams (we’ll let you fill in the blanks on this one). The result is what is sure to be one of Miami’s new social hubs.
Designed by Ken Fulk and Kobi Karp Architecture, the space is divided into two parts. Swan, the restaurant, holds court on the first floor, while Bar Bevy offers guests a retreat upstairs. Anyone who longs for the soft decadence of Old Hollywood will feel completely at ease in here. While Bar Bevy is a dark and sumptuous space, Swan is like 1960s Beverly Hills on steroids. (Who knew Pepto pink roses, long relegated to the boutineers of high school proms, could step back into the good graces of elegance?) On the outdoor patio, a scene befitting Mary Poppins, almost cartoonish in its charm.
But the food! We must mention the food. Chef Imbert made waves at Paris’s L’Acajou — an established favorite amongst the celebrity set — before winning season three of Europe’s Top Chef. For Swan, Imbert pulls inspiration from around the world for smart spins on classics. Here, Caesar salad gets a reboot, as does the humble bowl of spaghetti. Swan and Bar Bevy only just opened this month, so time — and the tastebuds — will tell, but if we’re judging on surface alone, we’re sure this place is going to get a lot of buzz for a good long while.
